Abstract: Drug-resistant bacteria from the genus Enterococcus are currently among the most important pathogens behind healthcare-associated infections. The drug resistance of these bacteria has been on the increase since the 1980s, leeding to their multi-drug resistance. Selective pressure, present mainly in the hospital environment, contributed to this phenomenon. However, also outside the hospital environment selective pressure came into play, namely the use of antibiotics as promoters of growth in animal husbandry and in food production. Household pets form a reservoir of drug-resistant enterococcal strains, too. The exchange of resistance genes between enterococcal strains from different niches poses a threat to public health.

Streszczenie: Lekooporne bakterie z rodzaju Enterococcus zaliczane są obecnie do jednych z najważniejszych patogenów odpowiedzialnych za zakażenia związane z opieką zdrowotną. Lekooporność tych bakterii narastała począwszy od lat 80. XX wieku, aby doprowadzić obecnie do ich wielolekooporności. Do tego stanu przyczyniła się presja selekcyjna występująca przede wszystkim w środowisku szpitalnym. Zaś w środowisku pozaszpitalnym presję selekcyjną stanowiło stosowanie antybiotyków jako promotorów wzrostu przy hodowli zwierząt, a także w produkcji żywności. Rezerwuarem lekoopornych szczepów enterokoków są również zwierzęta towarzyszące człowiekowi. Wymiana genów oporności pomiędzy szczepami enterokoków z różnych nisz stwarza zagrożenie dla zdrowia publicznego.

Abstract: Contamination of food and feeds with mycotoxins is a serious economic problem and primarily a phenomenon threatening human and animal health due to of their carcinogenic, nephrotoxic, genotoxic and teratogenic properties. In order to prevent mycotoxin production by fungi, special precautions should by applied, such as good agriculture practice, storing raw products under proper humidity and temperature conditions. Such actions are not always effective. Therefore, several possibilities are available for the decontamination of raw materials, including physical and chemical methods. Few of these have practical application. Biological decontamination to using microorganisms and enzymes has created new opportunities. This review discusses the available literature on the mycotoxins removal by microorganisms. Special attention was paid to Saccharomyces cerevisiae yeast and lactic acid bacteria. It seems that the application of selected strains of lactic acid bacteria and yeast in the production of fermented food and probiotic products may reduce the health risk related to human exposure to fungal toxins.
