Streszczenie: W pracy omówiono wpływ drożdży Saccharomyces cerevisiae na zawartość związków lotnych, etanolu, glicerolu i kwasowość lotną win oraz znaczenie inokulacji drożdżami nie-Saccharomyces i S. cerevisiae dla poprawy złożoności aromatycznej i charakterystycznych cech win. Ponadto przedstawiono oddziaływanie sekwencyjnej inokulacji S. cerevisiae i bakterii mlekowych z gatunku Oenococcus oeni na zawartość związków lotnych, diacetylu, acetoiny, kwasowość lotną, degradację kwasu jabłkowego, zawartość bursztynianu dietylu, mleczanu etylu, amin biogennych oraz podkreślono zaletę jednoczesnej inokulacji, jaką jest skrócenie czasu fermentacji. Zwrócono uwagę na rolę rodzimych szczepów drożdży i bakterii mlekowych w zwiększeniu regionalnego charakteru win. Omówiono także znaczenie enzymów wytwarzanych przez drożdże i bakterie oraz wzrost zainteresowania zdolnością przeprowadzania fermentacji jabłkowo-mlekowej przez gatunki bakterii nie-O. oeni, takie jak Lactobacillus i Pediococcus.

Abstract: The effect of Saccharomyces cerevisiae yeast on the content of volatile compounds, ethanol, glycerol and volatile acidity of wines as well as the importance of inoculation with non-Saccharomyces and S. cerevisiae yeast for improving the aromatic complexity and characteristic features of wines were discussed in the paper. Moreover, the consequence of sequential inoculation of S. cerevisiae and lactic acid bacteria Oenococcus oeni on the content of volatile compounds, diacetyl, acetoine, volatile acidity, degradation of malic acid, content of diethyl succinate, ethyl lactate, biogenic amines was presented. The advantage of simultaneous inoculation, which is the reduction of fermentation time, was emphasized. The work highlights the role of indigenous strains of yeast and lactic acid bacteria in increasing the regional character of wines. The importance of enzymes produced by yeast and bacteria, as well as the increased interest in the ability of non-O. oeni species, such as Lactobacillus and Pediococcus, to perform malolactic fermentation were also discussed.

Abstract: The authors present physiological and biochemical properties of lactic acid bacteria (LAB). It is surprising that despite LAB multiple auxotrophy (they lack certain metabolic pathways and grow on full media only), they are not pathogens but probiotic microorganisms producing bacteriocins. A list of probiotic bacteria is not long and including mainly lactic acid bacteria. Their metabolic properties (hydrocarbonate fermentation, transformation of protein substrates, exopolysaccharide production) are explaited in food production and preservation.

Abstract: The authors present the current state of knowledge about the proteolytic system of Lactobacillus helveticus and compare it with system presents in other lactic acid bacteria (LAB). The proteolytic activity of these bacteria is used in food production, where the degradation of the protein is responsile for flavor, aroma and texture. From all lactic acid bacteria L. helveticus have the highest proteolytic activity, which directly involved the cell envelope associated proteinases (CEPs). This also contribute to a formation of bioactive peptides referring to value of health promoting food. L. helveticus bacteria seem to be unique in terms of variation of the number of genes CEP proteins of all lactic acid bacteria. This paper review focuses on the genetic basis determining the properties of CEP proteins occurring in L. helveticus and possibilities of practical application of these bacterial strains.

Abstract: The ability of Lactobacillus to adhere to the intestinal epithelium is one of the most important criterion in the selection of probiotic strains. Adherence allows microorganisms to survive and temporarily colonize the digestive system, which is necessary to induce beneficial effects on the host. Adhesion is a very complex, multistep process and, although there are many proposed theories, the exact mechanism is still not fully understood. A crucial role in the formation of the adhesive interactions plays the bacterial cell wall and its components, such as exopolisaccharydes, lipoteichoic acids and various proteins e.g. S-layer proteins.
